Since I'm Hispanic, I feel obligated to answer this:

1.) Enchiladas. With or without tomatillo sauce, they're absolutley fantastic.
2.) Chicken Mole. A chocolate and chile sauce drizzled over tender chicken. Mmm.
3.) Carne Guisada. Tender beef tips smothered in delicious gravy.
4.) Quesadillas. Quick, easy, and scrumptious.
5.) Caldo de Res. Wonderful soup for a cold day.
