Answer
Cassia.Cinnamonum cassia is sold in the United States as "cinnamon", but it is not true cinnamon (Cinnamonum verum). Cassia does have a similar flavor, but isn't as aromatic. Also, the bark from the cinnamon tree curls in from both sides when dried, but cassia only curls from one side.
Most Europeans prefer cinnamon, but in Southern Europe, cassia is preferred.
