what relevance does the number 81 have on the phrase, "stand to face you". Or even why is 18 classed as "turn my back on you".

well because the number one is either facing or turning away from the eight obv.

if you go with aussies view on the riddle, then the answer would be "1" because that is what is faced/turned away. 9 can no longer be the answer. in which case the x and cross mean nothing, when they are the vital points of the riddle. if you leave it as it is, the concept is wrong, even if you can eventually guess why when you look at the answer given.
a better way to word this might be " if you give it an x, one will stand to face you. if you give it a cross one will turn their back on you." one being vague, and when first read most likely not associated with the number 1, but rather with "one" as a person which makes it tricky. but still showing relevance to the answer, where the 81 and 18 come in.
or another thought....in my above rewrite of the problem, replace "it" with "them" to let the reader kno you are giving at least TWO things the x and the cross. while its only ONE number, there are TWO of them. that could be personal preference, tho i think using "them" could help or hinder the reader. its a gamble. they could think that "them" means two DIFFERENT things, yet saying "it" may get them irritated when they see it was more than one item that had to get the x and the cross...ack thats a toughie
