Norovirus is linked with ready-to-eat food like deli foods and contaminated water, like shellfish. Wash hands to prevent, esp after using the bathroom.
Parasites can't grow in food, they require a living host. Not as common as viruses or bacteria. Asossiated with seafood, wild game, anbd food processed with contaminated water (manure used as fertelizer if it's "organic"). Cook to prevent, some can be froen to a specific temperature for a certian amout of time. That works in certified pork, which is raw but frozen for a certian amount of time, also sushi - grade fish. Trichinae worm causes trichanosis that used to be in pork but it's less common now.
Anisakis simplex - raw or undercooked fish, buy from reputable sources - cook to 135 degrees, killed by freezing
herring, cod, halibut, makerel, pacific salmon
Criptosporidium parvum - found in contaminated water and produce. People who camp and wash dishes in untreated water like a creek can get it. Found in some wild animals.
Giardia duodenalis (G. lambia/G. intestinalis) - carried by beavers, in contaminated water and produce. Prevolent in 3rd-world countries where the water is not ytreated. Exclude from operation
Cyclospora cayetanensis - incorrectly treated water, produce like berries, lettuce, and basil (herbs in hydropinic growing that used contaminated water). Exclude from operation
Fungi only make some people sick, because it's more of an allergenic reaction. They spoil food bot they aren't a foodborne "illness". Found in the air, dirt, in plants, and in foods. Wild molds or wild yeasts (grapes that get white on them is a little wild yeasts that is feeding on the sugar). Brewing beer or making bread rise is from yeast. If you open tomato sauce and it pops a little and smells sort of beery, it is fermeting with fungi. Molds may produce a toxin such as aflatoxin (neurotoxin) that does make you sick and coudl kill you in large doses. If you buy corn from a field and it looks blackish/gray/white, that is this mold. Causes hallucinations in horses and cattle and could kill them. This can cause kidney and liver damage. Found in corn and corn products, peanuts and peanut products (not at a store though usually), cottonseed, milk, and tree nuts.
Some molds are good (blue cheese, brie cheese) are good, but most aren't. Cut 1 inch all the way around mold on cheese (it sends out 'roots' in the cheese) or other food with mold.
Yeasts spoil food quickly, smell or taste like alcohol, like to grow in acidic food with little moisture, like jam, syrup, honey, and fruit/fruit juice. Throw out food that is infected with yeast.
