Then finally my head will show
When I'm pulled from the bed I'm in

It's garlic. Garlic has a nine-month growing season. The bulb, or head, is lifted from the garden bed. The outer skin is cleaned, and after just a few days drying out, the garlic is ready to be used with other foods.
