Step 5. Subtract one, giving three.
Step 6. Subtract two, giving seven.

What is going on here? In what situation does this make sense?

The things being added and subtracted are the segments comprising the display digits of a digital clock, as follows:

Step 1. You start with the five segments which comprise the digit five.
Step 2. One segment is added giving the digit six.
Step 3. Then another segment is added to the digit six, resulting in the digit eight, and so on, for the remaining steps.
