Answer
The grid contains the words for the numbers ONE through TEN. The words can be found by moving up, down, left, right, and diagonally through the grid.The E must be used twice in a row for THREE. Normally, word grids don't allow you to use the same letter twice in a row, so you could only spell THRE. Thus, the second E would be missing.

I thought the use of some letters twice but not the E in three was a bit odd.
I found THIEF, FIVE and FINGER so I was looking for something missing having to do with thieves and a five finger discount! Ha ha ha.

Agree that seven and nine are also incomplete. Tricky teaser but not the most well-planned to be honest.
