Answer
A tree.The rings of trees tell how old a tree is. When a tree is cut down, the number of rings can be seen to tell just how old the tree is. Before it is cut down, you cannot see the number of rings.

Good riddle! My first read I was thinking volcano. It fit pretty well... It grows, has a long life, diamonds & rubies inside, etc. Read it again and the age thing popped, then the rings instead of diamonds, etc. Very fun! Thanks.

I was @ a point of 2 answers and after a little thought, my first original answer prevailed. Your teaser was very ingenius. I enjoyed it, because it raised a shadow of a doubt within me, and I had to verify my answer. Awesome job!
I love nature riddles, but this one stumped me. I thought "tree", but didn't understand the "jewel" part, nor how you don't know how old until it dies (you can use an increment borer to drill a small hole into a tree to determine age). So I started thinking oyster or something like that - i.e. you don't know how "big" the jewel is until you take it out and kill it. Anyways, it was fun trying to figure it out.

I thought it was pretty easy if you leave (heh get it leave) out the clues about the jewelry.
I got the riddle mainly from the age clues. I still don't know what jewelry is and how it is hidden unless it is referring to the rings.

Well, my mind must be a mess. I went straight to a huge burial area in a pyramid...then I couldn't see the trees for the mummies and jewels! Good one!

I was going with tree till the part about knowing the age once its dead.
You can take a core sample of a tree and learn its age without cutting it down and killing it.
Although I suppose the average person does not have a coring drill.

In general, oysters live about six years. I know they can live much longer than that, but in general, it is six.
